Yellowtail Amberjack is the wild version of the popular sushi item, Hamachi, and it inhabits the waters of the Eastern Central Pacific. It is caught using handlines, trolling lines, and driftnets and the gear is relatively selective thereby minimizing bycatch and other incidental disturbances to the ocean environment. Populations off the Mexican coast are at target levels and we receive fresh product from that region daily.
