Our fresh Wild King Salmon Fillet is primarily sourced out of Sitka, Wrangell, Seward, and Yakutat Alaska; we will also bring in some fish from the Washington and Oregon coast July - October. The salmon fishery in the US North Pacific is sustainably managed under strict regulations and the quality of the fish is exceptional. We work with a trusted network of suppliers and fishermen and women, during the fresh season, who excel at getting top quality product through the pipeline rapidly. Taste attributes for King salmon will differ depending upon their river system of origin, when they were caught in their lifecycle, and how they were caught and handled. We are experts in this area and know what fish to bring in and when to do it.
