Hamachi is the farmed and previously frozen version of Yellowtail Amberjack and is almost exclusively used in Sushi preparations. Any parasites that a Wild Yellowtail might have are eliminated through controlled aquaculture and in the freezing process. For reference, the Wild Yellowtail inhabits the waters of the Eastern Central Pacific. It is caught using handlines, trolling lines, and driftnets and the gear is relatively selective thereby minimizing bycatch and other incidental disturbances to the ocean environment. Both the previously frozen and fresh Yellowtail are of extremely high quality, and it depends upon the preparation that you choose when selecting the correct version of this product - Wild Yellowtail is great on the grill while previously frozen Yellowtail is great when sliced thinly, eaten raw, and dipped in soy sauce.
