Our Smoked Wild King Salmon Candy Strips in the 16oz vac-pack is a specialty item that we smoke in-house. We cut Wild King fillets into 10-inch strips, shorter than the bulk strips that we also offer, brine them with salt and brown sugar, rinse them after 12 hours of brining, dry them with fast moving air, dust them with brown sugar, and then we hot smoke the strips with Alder and Cherry at 145degrees for 9 hours. The high oil content of the King salmon allows the fish to remain relatively moist and the flavor to remain balanced and not overpowered by the smoke. The flavor is pleasantly smoky, sweet, buttery, and rich; the texture has a medium flake size, is moist/oily, and jerky-like.
